How to brew Chinese tea

暖壼, 暖杯
Warming Up the Teapot and Tea Cups

把熱水注入茶壼及茶以作温熱, 此舉可清潔茶具及有助茶葉散發香氣和味道。

Pour hot water to the teapot and tea cups as as to get cleaned and can help relasing tea's aroma and flavour.

置茶
Placing of Tea Leaves

利用茶則把適量茶葉放入茶壼。

Make use of tea scoop to put right amount of leaves into the teapot.

温潤泡
First Brew

注入熱水後, 用茶壼蓋將泡沫刮走, 把第一泡茶湯倒去。

After pouring of hot water into teapot containing tea leaves, sweep aside the bubble with the rim of the cover of the teapot and throw away the first.

沖茶, 焗茶
Brewing Tea

視乎茶葉特性, 重新注入合適水温的水到茶壼。

According to the characteristics of tea leaves you are brewing, pour water with suitable temperature into the teapot.

出茶
Serving Tea

為了使每杯茶湯的濃度一致, 以下有兩個做法。

  • 先把茶湯倒至公道杯, 待沉澱後再分到其他茶杯。
  • 先緊密地擺好茶杯, 輪流給每隻茶杯倒入茶湯。

To have even concentration of tea, there are two different ways:

  • Pour the brewsed tea to a tea jug, let it settle down and distribute it evenly among alll tea cups.
  • Place all the tea cups side by side, pour brewed tea to those cups back and forth until all gone.
