牛肝茵香烤粟米配激辛千島醤
Grilled Corn & Dried Porcini Mushrooms with Super Hot Chili Thousand Island Sauce

 

小心!!!這是一款極度刺激惹味的菜式。加辣後的千島醤使烤粟米更惹火, 加上香烤了牛肝茵是無法抗拒的。

Caution!!!This is an extremely exciting dish. The bespoke thousand island source is super hot and zesty, and it is absolutely irresistible with the grilled porcini mushrooms topping.

牛肝茵乾
Dried Porcini Mushrooms

粟米
Corn

醤料材料 Dressing Ingredients

蕃茄(去皮及切粒)
Tomato (Peeled and cut into cubes)


Sugar

芥苿醤
Mustard sauce

檸檬汁
Lemon juice

辣椒
Chili Pepper

茄膏及茄汁
Tomato puree and/or ketchup


Vinegar

黑胡椒砕
Black pepper ground

橄欖油
Olive oil


Salt

蒜頭
Garlic (Crushed)

油浸鳀魚魚柳
Anchovy fillets packed in oil

方法 How To Make

先把牛肝茵乾浸水20分鐘以上
Soak the dried porcini mushrooms with at least 20 minutes before use

把所有醤汁材料混合, 用攪拌機打勻。
Mix all the sauce ingredients with a blender

把粟米去皮及洗浄,保留尾部部分葉作裝飾。
Clean and peel the corn, keep few leaves at the bottom for garnishing.

把粟米蒸至七乗熟
Steam the corn to medium well.

用中火預熱烤盤
Preheat the grill pan with medium fire.

在預熱烤盤的同時, 把粟米切成多個扇形。先把頭尾切開, 在中間打橫切開一半, 然後打直對切, 得出結果是半圓柱體, 再把半圓柱體打直切開成扇形。
While heating the grill pan, cut the corn into sectors. Firstly, cut it at middle to have two cylinders; cut the cylinders vertically into half; finally, further cut the half cylinders into sector.

在預熱了烤盤上塗上食油, 然後放上切好的粟米及牛肝茵乾。
Layer some vegetable oil on the heated grill pan, put those corn sectors and the porcini mushrooms on to it as well.

當粟米開始起焦, 便可以熄火。讓餘温多烤一陣子。
Turn off fire when the corn becomes crispy. Leave it for a while.

把粟米上碟, 淋上醤汁。
Place the corn nicely and pour the sauce on

最後把烤好了的牛肝茵乾放上面便完成
Place the grilled porcini mushroomsour as the topping and done
