醃青瓜
Cucumber Pickle

 

這是一個非常簡單的經典家庭食譜。 醃製好的青黃瓜不但爽脆, 而且有酸酸甜甜, 非常開胃。

青瓜(切片)
Cucumber(Sliced)


Sugar

蒜頭(去皮)
Garlic (peeled)

新鮮刁草
Fresh dill

芥末籽
Mustard seeds

明礬
Alum

月桂葉
Bay leaves


Vinegar


Salt

黑胡椒粒
Black pepper

方法 How To Make


1

準備一個乾浄的玻璃瓶
Prepare a cleaned and dried glass jar

把水, 醋, 糖和塩一併煲滾
Boil the mixture of water, salt, sugar and vinegar

把青瓜切擠入玻璃瓶
Pack the sliced cucumbers into the glass jar

加入黑椒粒, 蒜頭, 新鮮刁草, 月桂葉, 芥末籽及明礬入入玻璃瓶
Add black peppercorn, garlic, fresh dill, bay leaves, mustard seed and alum into the jar

把冷却了的混合液倒進玻璃瓶, 但不要倒滿, 在頂部預留一點空間
Pour the boiled mixture into the jar and leave some space on top

扭緊瓶蓋
Tighten the lid of the jar

把玻璃瓶放在没有陽光直接照射的地方。兩星期後即可食用。
Place the jar anywhere without direct sunlight and leave it alone for about 2 weeks.
